Tres Leches Cake

What you'll need: 

For the cake:

Keto Condensed Milk:

  • 1 cup heavy cream
  • 2 tbsp keto confectioners sweetener
  • 1 tbsp butter
  • 1 tsp vanilla extract (optional)

Tres Leches Mixture:

  • Keto Condensed Milk (see above)
  • 1/4 cup heavy cream
  • 1/4 cup half & half 

Frosting:

  • 3/4 cup heavy cream
  • 2 tbsp keto confectioners sweetener

How to prepare:

  1. Preheat oven to 350 degrees F
  2. In a small saucepan, melt butter and sweetener
  3. Add in your vanilla and heavy cream.

  4. Bring the mixture to a boil and then turn down to low. Just keep stirring the cream until it is simmering, but not foaming.

  5. Once it has reduced by HALF and and covers the back of a spoon, that means it's done.

  6. In a large bowl, prepare cake mix as directed
  7. Bake in a 8x8 pan lined with parchment paper for 30-40 mins.
  8. Remove from oven and let the cake cool
  9. Once cooled, poke holes in cake using a fork
  10. Pour mixture over the entire cake letting it soak it all up
  11. Covered and put in the fridge to cool. Best overnight but at least 3 hours
  12. Top with whipped cream and enjoy!

 Instructions for frosting 

  1. Mix together heavy cream, sweetener.
  2. Beat until thick and creamy
  3. Top cake with frosting and sprinkle with cinnamon! The colder this cake, THE BETTER
