Ingredients
- 1 Package Keto Queen Kreations Yellow Cake Mix
- 1/2 cup espresso + 2-3 TBSP dark rum
Mascarpone Filling
- 16 ounces mascarpone cheese, softened
- 1/4 Cup espresso (cooled completely) *in addition to the above 1/2 cup espresso
- 7 TBSPS powdered sweetener
- 1 cup HWC (room temperature)
Instructions for cake layer
- Prepare as directed on pouch, Let cool completely. Slice cake in half horizontally. Carefully separate layers or divide batter between two 8" pans to bake
Instructions for Filling
- In a medium bowl, mix mascarpone cheese, espresso, and powdered sweetener on slowest speed of mixer until combined

Add HWC while continuing to mix slowly to combine
Assembly
- Place first layer of cake on serving dish and brush with 1/4 cup of the coffee/rum mixture
- Spread 1/2 cream mixture on top and place 2nd half of cake on top of the cream
- Brush with the remaining coffee/rum mixture then spread remaining cream on top and on the sides of the cake
- Dust with cocoa powder and top with dark chocolate shavings, if desired
- Refrigerate 1-2 hours before slicing
