It was good but I did add a little extra monk fruit to the mix. It was more like a bread than a cake but still tasty. I didnt put a frosting on it, I just ate it plain. Cut up into small pieces and had them bagged up for breakfast on the way to work.
It was so moist and just the right amount of sweetness. I’m so excited I can now eat cake and find a mix that doesn’t use almond flour! I’m allergic to them.
I made this yesterday and am so pleased with how it turned out! I embellished a little and put a few orange-vodka soaked raisins in the batter (not so much keto, but a treat for the holiday). When I took it out of the oven, it looked ugly wrinkled, but I frosted with a cream cheese pecan frosting and it's absolutely delicious!
Carrot cake I was not impressed with . Maybe I'll try a different one next time
I’m not a carrot cake lover but my dad is. I made a cake for him using this mix and he couldn’t believe how delicious it was. He asked me to buy him a package. So definitely recommend!
