Dough-Free Pizza
What you'll need:
- 1+1/4 cup shredded mozzarella cheese
- 1/4 grated parmesan cheese (I use Locatelli Pecorino Romano)
- 1/4 grated Grana Padano*
- 2 eggs
- pizza toppings of choice
- 8" baking dish
How to prepare:
- Preheat oven to 350 degrees F
- Spray pan with cooking spray
- With a fork, combine all above ingredients except topping and mix well
- Add mixture to baking pan
- Bake for 15 minutes
- Remove from oven and add pizza sauce (I use Rao's), and add desired toppings
- Put back into oven until melted, about 10 mins
- Enjoy!
Notes: *Use 1/2 cup grated parmesan if you don't have Grana Padano
