Tiramisu Cake

What you'll need:

For the Cake:

Frosting:

  • 8 oz. mascarpone cheese
  • 6 eggs (yolks and whites separated)
  • 1/4 cup sweetener
  • 1/2 tsp vanilla extract

    How to prepare:

    • Preheat oven to 350 degrees F
    • Prepare cake as directed on package
    • Grease 2 6" cake pans(double layer) or 1 9" (single layer) and pour batter into pan
    • Bake for 25-30 minutes or until toothpick comes out clean
    • Set aside and let cool
    • Once cooled gently poke holes in the baked cake using the tube end of a wooden spoon
    • Pour espresso over the cakes and refrigerate 
    • While cake is being refrigerated prepare frosting
    • Beat egg yolks and sweeter until thick and it turns white in color. Once thick add in the mascarpone and vanilla extract
    • In a separate bowl beat egg whites until stiff
    • Gently fold in 1/4 egg yolk mixture to egg whites, add remaining mixture and fold until combined
    • Remove cake from pan and place gently on a serving dish.
    • Use half of the frosting on the 1st layer
    • Dust top with unsweetened cocoa
    • ENJOY!
