Keto Almond Joys

What you'll need: 

For the cake layer:

    "Almond Joy" layer:

    • 1/2 cup heavy cream
    • 1/3 cup sweetener
    • 1 1/4 cup shredded coconut
    • 1/4 tsp almond or coconut extract (optional)
    • 16 almonds

    Chocolate "fudge" layer:

    • 1/2 cup sugar free chocolate chips (I use Lily's) or 4 oz unsweetened chocolate finely chopped (you will have to add sweeter in if using this option about 1/3 cup of confectioners sweetener )
    • 1/2 heavy cream 

      How to prepare:

      • Preheat oven to 350 degrees F
      • Prepare and bake brownies as directed on package in a 8x8 pan
      • Set aside and let them cool
      • While brownies are cooling down, prepare filling
      • In a medium pan, pour in heavy cream and cook for 5 minutes until it boils. 
      • Stir in sweetener and extract then remove from heat 
      • Add in shredded coconut and mix well to combine. Allow mixture to cool down approximately 5 minutes
      • Spread filling over cooled brownies then place almonds in 4 rows of 4(see picture below)keto almond joy coconut layer
      • Place chocolate in a medium sized heatproof bowl
      • Bring heavy cream to a boil over medium high heat
      • Pour cream over chocolate and let it sit for 10 minutes, DO NOT STIR YET!
      • After 10 minutes, stir chocolate until smooth and shiny.
      • Pour chocolate over coconut layer and refrigerate for 30 minutes
      • ENJOY!
